mediterranean chicken


i had a chance to help a friend (my home teacher) cook dinner for a couple today. he decided to make mediterranean chicken which was divine.

ingredients: 1 egg; 1/2 cup heavy whipping cream; 1 cup crushed saltine crackers; 1/4 cup grated parmesan cheese; 2 tablespoons chopped fresh basil; 1 tablespoon garlic powder; salt and pepper to taste; 1/4 cup olive oil; about 4 chicken breasts

1. preheat oven to 400 degrees fahrenheit

2. combine egg, heavy cream and beat together well

3. in another bowl combine cracker crumbs (crushing the crackers is something the nephew would definitely enjoy...if you could prevent him from eating the crackers), cheese, basil, garlic powder, salt and pepper to taste

4. rinse chicken and pat dry. dip each piece into the egg wash and then roll in cracker crumb mixture.

5. fry chicken in olive oil (medium heat) for about 5 minutes or until golden brown and crusty.

6. place chicken in baking dish and cover with foil.

7. bake, covered, at 400 degrees fahrenheit for 15 minutes, remove foil and bake, uncovered for 15 - 20 minutes.

8. proceed to eat (plating food is optional)

    It sounds delicious. Breaded+fried+something fancy-smancy in the name like Mediterranean has to be amazing.
